
Using the Breville stand mixer, cream the cold butter cubes until smooth.
Add the brown sugar and white sugar and light mix until well incorporated (2 mins).
Slide in 2 eggs and vanilla extract and mix for another 2 mins.
In a separate bowl, mix to combine sifted all purpose flour, baking powder, baking soda and salt.
Pour in the flour mixture into the wet batter and mix for 3 mins.
Pre-heat Breville oven to 180 Deg C under "Bake" Function. Make sure that the rack is placed in the bottom part of the oven.
Fold in roasted chopped walnuts and chocolate chips into the cookie dough.
Place a parchment paper into the Breville oven baking pan and scoop in cookie dough into the baking pan. (cookie dough should weigh in 6 oz or 170 g each)
Bake the cookies under 180 Deg C for 12-15 mins.
Once baked, serve with cold fresh milk and enjoy.
