 400 g Poultry, Chicken Thigh
 30 g Coffee, powder
 15 g Cumin powder
 15 g Paprika Powder
 15 g Spice, Garlic Powder
 15 g Dry Goods, Brown Sugar
 45 g Sea Salt
 15 g Coriander, leaves
 115 g Vegetable, Bell Pepper Red
 115 g Bell pepper, green
 100 g Vegetables, White Onion
 125 ml Oil, Olive Regular

In a mixing bowl, combine all of the spices and olive oil. rub it to the chicken let it sit for 20 mins.

Preheat Breville Smart Oven Pro (Grill Function). Spray oil in the baking pan, place the chicken thigh fillets. Grill for 10 mins on high temp. Add sliced onions, bell peppers and grill for another 10 mins.

When the chicken is done wrap it into the lettuce cups and pita bread.

Garnish with fresh salsa (separate recipe) Drizzle yogurt (optional)
