When we ask about your favorite butter loaf, I’m sure you already have your usual go-to bakeshop in mind. Aside from being buttery, we’re glad to introduce our nutty and fruity flavor version of this classic with our choice of nuts and berry.

 120 g butter
 570 g white sugar
 500 g eggs
 1 tsp vanilla
 ¾ tsp butter oil
 374 g all purpose-flour
 1 tsp baking powder
 ½ tsp baking soda
 ¼ tsp salt
 240 g milk
 150 g walnut
 150 g pistachio
 240 g DLA blueberry lemon glaze, to top

Preheat Breville Smart Oven™ Pro at 180°C under Bake Function.

Using the Breville Bakery Boss™ with the double scraper attached, cream butter and sugar until light and fluffy.

Add eggs one at a time, until just combined into the mixture. Mix in vanilla.

Add flour, baking powder, baking soda, salt, milk, walnut and pistachio to the mixture ensuring everything is mix thoroughly.

Pour mixture into a loaf pan. Swirl in blueberry on top.

Bake for 40 minutes to 50 minutes or until inserted. Let cool.

Once cool, put lemon glaze on top of loaf.

Serve during breakfast or as an afternoon snack.
