 0.25 cup white chocolate chips
 100 g pistachio, nuts
 80 g Fruits, Strawberry
 170 g Dairy, Unsalted Butter
 150 g Brown Sugar
 50 g Sugar, refined
 1 piece Eggs, raw
 2 tsp Vanilla extract
 2 cup All Purpose Flour
 2 tsp cornstarch
 1 tsp Baking Soda
 1 tsp Salt, Iodized

Using the Breville Stand Mixer, beat the butter for 1 minute on medium speed in a large bowl until completely smooth and creamy. Add the brown sugar and granulated sugar and mix on medium high speed until fluffy and light in color.

Beat in egg and vanilla on high speed.

In a separate bowl, whisk the flour, cornstarch, baking soda and salt together until combined.

On low speed, slowly mix into the wet ingredients until combined. The cookie dough will be quite thick. Add the white chocolate chips, minced strawberries, and chopped pistachios, mix on low for about 5-10 seconds until evenly disbursed.

Cover dough tightly with aluminum foil or plastic wrap and chill in the refrigerator for at least 30 mins. Chilling is mandatory for this cookie dough.

Remove cookie dough from the refrigerator, line two large baking sheets with parchment paper and scoop in the cookie dough using a an ice cream scooper (small).

Preheat Breville oven to 180 Deg C. Once the oven is hot, bake the cookies for 15 mins under 180 Deg C.

Once the cookies are cooked, take it off the oven and let it rest for 5 mins then serve.
