 1 carrot, grated
 Bunch spring onions, sliced, plus extra strips to serve
 1 garlic clove, crushed
 3 ¼ piece ginger, grated
 400 g block firm tofu, drained and crumbled
 2 eggs, lightly beaten
 100 g mushrooms, shitake or button
 2 large bell pepper (cut into 1/2" rings)

In a bowl, combine the carrots, spring onion, garlic, tofu, ginger and mushrooms.

Add the eggs and season to taste.

Set the Breville BBQ Grill™ in its searing temperature, then place the bell pepper rings on the flat surface.

Place an ample amount of the mixture in the rings and let it cook.

Close the grill and let the patties cook.

TIP: Serve these treats in a bun and top with a dollop of mayonnaise. You can add whichever vegetable you feel playing with like broccoli or even corn.
