 250 g Sweet potato
 1 piece Carrot
 1 piece white onion, sliced
 3 piece garlic clove, minced
 2 cup Chicken stock
 1 tsp Sea Salt
 0.3 tsp dried ginger, ground
 1 piece fresh rosemary, sprigs
 4 tbsp Olive oil
Garnish
 1 tbsp cooking cream
 1 tbsp mixed nuts (cashew, almond, peanut)
 1 tsp Olive oil

Preheat Breville Smart Oven Air Fryer to 175 Deg C.

In a baking rack place the diced sweet potatoes and carrots and drizzle with 2 tbsp of olive oil.

Roast for 12 mins under 175 Deg C.

In a preheated pan, drizzle olive oil and sauté minced onions for 2 mins under low heat.

Add minced garlic, salt and ground ginger, then sauté for another 3 minutes.

Once the sweet potatoes are cooked, transfer it into the pan with sautéed garlic and onions.

Add the chicken stock into the pan and simmer for 5 mins.

Transfer everything into the Breville blender, and process until smooth.

To assemble: Transfer the soup into a bowl and garnish it with chopped mixed nuts, fresh rosemary leaves and drizzle with cooking cream and remaining olive oil.

Serve and enjoy.
