
Prepare the ripe mango puree: Take off the meat of the ripe mango. Using Breville Kinetix Pro Blender, puree the mango meat. Chill until ready to use.
Cupcake batter: Combine all purpose flour, baking powder, sugar, eggs, vanilla extract and 3 tbsp of mango puree uisng Breville Bakery boss stand mixer (light mixing).
Grease the cupcake tray with oil. Pour the cupcake batter then bake into pre-heated Breville Smart Oven Pro for (175 Deg C)f or approximately 25 minutes or until you insert a toothpick in the center and comes out clean.
Assembly: Pipe the whipped cream on top of the cupcake then drizzle with remaning mango puree. Serve and enjoy!
