
Zest the lemons and set aside the zest. Cut the lemons in half.
Extract the juice from the lemons using the Breville Citrus Press.
Using a double boiler*, combine the lemon juioce, eggs, yolks and sugar. Once the ingredients are thoroughly mixed add the butter and lemon zest.
Remove the bowl from heat and transfer it to an ice bath. Stir and transfer into a jar and store.
