Using locally-found ingredients will surely bring out familiar Filipino flavors in any dish. Our version of baked penne will take your food moment to another level with the use of kesong puti and home-grown spinach. You’ll never guess it’s meatless!

Cook penne pasta according to instruction using the Breville Multi Chef™. Set aside once done.
Mince garlic and onions. Thinly slice shiitake mushrooms. Set aside.
Using the same hot pasta water, blanch spinach for a minute. After doing so, place in an ice bath.
Sauté minced garlic, onions and mushrooms using the Multi Chef™.
Add tomato sauce then season with salt and pepper to taste. Simmer for 8 minutes.
Stir in spinach and black olives into the sauce. Pour in cooked pasta. Combine well.
Preheat the Breville Smart Oven™ Pro under Bake Function for 160°C.
Transfer pasta into an oven-safe casserole. Crumble kesong puti on top and sprinkle bread crumbs
Pop into the oven and bake for 10 minutes.
Serve with garlic bread on the side.
