Chop the bacon into bits, in a pan toast the bacon bits to render the fat. Drain the oil and set aside.
Using the bacon fat add 2 tbsp of olive oil and sauté onions for 3 mins. Add the paprika and garlic then sauté for another 2 mins. Add the tomatoes and cook for another 2 mins.
Break the eggs, whisk it add salt, pepper and cheese then transfer into the pan of cook for 10 mins. when the sides of the fritata is set transfer in a pre heated oven (175 Deg C) and bake for another 15 mins.
When cooked take it off the oven transfer into a plate sprinkle bacon bits and microgreens (optional).
