Crack an egg in each ring and allow it to spread out to fill the bell pepper ring. Season the eggs with salt and pepper, to taste. Adjust height and low down top plate. Grill the fish and sliced English muffins. Using the Breville Power Grill. Turn temperature dial to ‘SEAR’ then Start the machine. Preheat for 4 minutes. And Lay all fish on the flat grill plate. Grill for 3 minutes in each side. Then place all Muffins on the ribbed plate. Grill for 1 minute in each side. Slice fish into half when cooked. Set aside fish and muffins.
Assemble burgers. Spread 1 teaspoon of Mayonnaise on each Muffin. Then layer with a piece of lettuce, sliced tomatoes, onion rings, Grilled fish then add a teaspoon of Cole Slaw, then place Pepper Eggs on top. Repeat this process for the remaining burgers.
Be creative as you plate. Serve while warm.
