
Peel and chop the carrots, mince garlic and onions.
In the Breville Smart Oven Air Fryer baking pan, place the chopped carrots, minced garlic, onion and chickpeas. Drizzle with olive oil.
Preheat Breville Smart Oven Air Fryer to 200 Deg C “Air Fryer” function.
Air fry the veggies for 10 mins under 200 Deg C.
Once cooked, transfer the veggies into the Breville Fresh and Furious blender jug.
Add chicken stock and process until smooth.
Transfer the processed veggies into a pan, mix in curry powder, paprika, rosemary, salt and pepper.
Simmer under low heat for 8 mins.
Once the soup thickens, transfer it into a soup bowl and garnish with cilantro leaves, chickpeas and olive oil.
Serve with pita bread. Enjoy.
