 700 g Sweet potato
 80 ml Olive oil
 15 g Marjoram
 15 g Basil, dried
 20 g Sea Salt
 10 g Black Pepper Crushed
 15 g Spice, Spanish Paprika
 230 g Dairy, Mayonnaise
 30 g garlic, raw, peeled
 1 piece Yellow Bell Pepper
 1 piece Orange
 0.5 cup Camote Tops
 1 piece Ginger, thumb
 2 piece Carrots (local)
 0 Baked Sweet Potato chips
 0 Orange you happy juice

Preheat Breville oven to 200 Deg C. Line 2 large baking sheets with parchment paper and set aside.

Peel the sweet potatoes, and use a mandolin slicer to cut the sweet potatoes into paper-thin rounds.

Combine olive oil, salt, black pepper, and dried marjoram, dried basil, smoked paprika in a large mixing bowl. Add sliced sweet potatoes to the bowl and toss to coat.

Spread sweet potato slices into a single layer on the baking sheets, and leave space around them. Bake about 10-12 minutes on each side turning them once, until golden. Remove from the oven and cool the sweet potato chips on cooling racks for about 5-10 minutes. They will crisp up a little more as they cool.

For the Garlic Aioli: process 2 cloves of garlic, pinch of salt and pepper, 1 cup of mayonnaise and 1/4 tsp smoked paprika using Breville blender until well incorporated.

For Orange You Happy juice: wash all the ingredients well. Peel the orange.

Process all the ingredients using the Breville juicer.

Pour into glasses and serve.
