 2 piece Fruits, Avocado
 3 piece Eggs, raw
 100 g Fruits, Ripe Mango
 50 g Vegetable, Salad Tomato
 10 g Herb, Cilantro
 15 g Sea Salt
 5 g Spice, Black Pepper Crushed
 10 g Spice, Spanish Paprika

For the Fresh Mango Salsa: Slice the ripe mango in half, take the meat out and slice it into a mince.Slice to tomatoes, disregard the seeds and mince together with the red onions.

In a bowl combine minced mangoes, tomato, red onions and chopped cilantro leaves. Add a pinch of salt and pepper and drizzle with 1 calamansi juice.

For the Avocado Egg Boats: Preheat Breville Smart oven to 200°C and adjust oven rack to middle position.

Cut each avocado in half and remove the pit. Using a spoon, scrape out the center of each halved avocado so that there is space for 1 egg.

Squeeze the Calamansi juice over the avocado and place onto a baking pan.

Crack eggs into a medium bowl. Carefully spoon one yolk into each avocado halve. Add eggs white as space permits.

Place in oven and bake for 10 minutes or until whites are firm. Remove from oven and season with salt, pepper, and paprika.

Garnish with fresh mango salsa on top! Enjoy!
