
1 cup Pre-boiled squash, peeled and cubed
1 cup Cabbage, sliced
1 cup Pre-boiled white beans
1 cup Alugbati leaves
½ cup Red beets, cubed
½ cup Cashew nuts
½ cup Mushrooms
⅛ cup Coconut oil
1 tsp Salt
¼ tsp Pepper

Preheat Breville Smart Oven Pro to 180 Deg C

Brush parchment paper with coconut oil. Spread the veggies into the pan then drizzle with coconut oil and season with salt and pepper.

Roast the veggies for 20 mins under 180 deg C.

Add cashews and enjoy!
