 1 cup Pre boiled white beans
 1 Sweet potatoes, chunks
 2 Beetroot, wedges
 1 Red Onion
 1 Cabbage, sliced
 4 Petchay, finely chopped
 1 tbsp Coconut oil
 1 cup Alugbati leaves
 1 tsp Sea salt
 1 tsp Sesame seeds
 ½ tsp Dried Chili Flakes
 2 tbsp Sesame oil
 ½ cup Calamansi juice
 ½ cup Roasted Cashews

Using the Breville Oven, pre heat to 180 Deg C. Then activate Roast Function set it to 30 mins.

Line a baking tray or pan with baking paper and add sweet potato, beets, red onions. Drizzle with 1 tbsp Sesame oil and season generously with salt. Roast in oven for 30 minutes.

After 30 minutes, remove pan from oven and add white beans,petchay and cabbage. Drizzle with remaining sesame oil and season with salt. Return to oven for a further 15 minutes, until beans are warmed and petchay is crispy.

Add sesame oil and calamansi

Remove pan from oven, add Alugbati leaves and drizzle dressing over roasted vegetables and beans. Finish with sesame seeds and chilli flakes for garnish.
