 30 ml Olive oil
 2 pcs Eggplant
 1 tbsp Minced garlic
 1 large White onion quartered
 1 med White onion minced
 ¼ kg Chicken thighs cubed
 1 tsp Salt 
 ½ tsp Black pepper corns
 1 pc Lemon
For the Mornay Sauce
 50 g Butter, unsalted
 50 g Flour
 2 cups milk
 20 g Parmesan cheese
 40 g Feta Cheese
 20 g Cream Cheese
 ½ cup water
 50 g chives

Cut the the chicken thigh and the eggplants into 1-inch cubes

Using the Breville Multichef Sauté/Sear function, drizzle olive oil
then sweat garlic and onions for about 2 mins.

Sauté egg plants for 3 mins then set aside.

In the same pan Add the chicken cook for 3 mins, zest in lemon skin. season with salt and pepper.

Set asside the chicken.

Use 3 inch bamboo skewers, skew in the eggplant, chicken, oinions.

For the Mornay Sauce

Using the Breville Multichef Sauté/Sear function melt the butter.

Stir in the flour cook until white.

Add milk and chicken juices gently cook for 8 mins until no taste of flour with continous whisking.

Add grated parmesan, feta and cream cheese, whisk until smooth.

Add chopped chives. Season with salt and pepper.

Serves as dipping sauce of the chicken skewers.
