 40 g Cashew nuts
 240 ml Oil, Olive Regular
 5 g Spice, Chili Flakes
 220 g Dairy, Unsalted Butter

For the Roasted Garlic: Put garlic in baking pan or muffin tin: Place the garlic heads in a baking pan, cut side up

Drizzle with olive oil: Drizzle a couple teaspoons of olive oil over each exposed head, using your fingers to rub the olive oil over all the cut, exposed garlic cloves.

Cover the bulb with aluminum foil. In a preheated Breville smart Oven Pro 175°C, roast the garlic for 30 mins.

For the Pesto Butter Cool and remove roasted garlic cloves from their skins. Using the Breville kinetix Pro Blender put the roasted garlic cloves into the blender jug.

Add the fresh basil, cashew nuts, chilli flakes salt and butter then process until smooth.

Spread the pesto butter into a cling wrap and roll it like a small log. Chill for 1 hour.

Cut the solid flavored butter into medallions (make sure to remove the plastic wrap) and serve it with toasted bread or crackers.
