 ½ kg pork, shoulder, bone out
 200 g bacon
 2 cups Power Juice Pulp (from the juice)
 ¼ cup tomato ketchup
 ¼ tsp cayenne pepper
 ¼ tsp spanish paprika
 ¼ tsp ground dried oregano
 2 pcs egg
 ¼ cup breadcrumbs
 1 pcs white onion
 5 pcs. cloves garlic
 1 tbsp sea salt
 ¼ tsp ground black pepper
 1 tbsp worcestershire sauce
 1 cup mashed potato (separate recipe)
For the meatloaf sauce
 ¼ cup tomato ketchup
 2 tbsp oyster sauce
 1 tbsp brown sugar
 2 tbsp white vinegar
 onion leeks (thinly sliced for garnish)

Place the meat in the Breville Kinetix Pro™ & press “blend”. Make sure the meat is well chilled before processing.

Once you have reached the desired consistency of the meat (ground), transfer it into a bowl and all the other ingredients.

Season with salt and pepper. Test your mixture by frying a small amount.

Using the bake function, preheat the Breville Smart Oven Pro™ to 190°C.

In a muffin tray, brush some oil then place a slice of bacon on the sides and place a scoop of the mixture (120 – 150g each).
Bake uncovered for 30 mins.

for the sauce:

in a pan combine, ketchup, brown sugar, vinegar, and oyster sauce.
Stir until well-incorporated simmer for in very low heat 2 mins.

Once cooked, pipe out mashed potatoes on the outer side of the meatloaf muffin creating a uniformed circle.

pour meatloaf sauce on top and garnish with thinly sliced leeks.
