So you’d like to try that sushi bake but you’re cutting down on carbs? Let’s try substituting white rice with cauliflower rice.

Start by preparing the mise en place. Wash all of the vegiies thoroughly. Cut the cucumber into 1 inch stick, Slice the red bell pepper into strips. Cut the cauliflower into florets.
Place the caulflower florets into Breville blender then pulse for 2 mins or until the cauliflower breaks down like rice grain size.
In a preheated pan (low fire), Dry sauté the cauliflower rice grains for 3 mins.
In a bowl, combine cauliflower rice, cream cheese and 1 tbsp white vinegar.
Spread the nori sheets into the bamboo mat then spread the cauliflower mixture. Add sliced cucumbers and red bell pepper at the center.
Dampen the bare edge of the nori sheet then roll up tightly. (Optional: drizzle with japanese mayo and toasted black sesame seeds.)
Slice into bite size and serve!
