For the locals, it’s impossible to have a party without barbecue. Try our healthier version of kebab that’s packed with colors, flavors and nutrients. With freshly extracted chili-sesame oil on the side, surely this will be a big hit for kids-at-heart!

For the Kebab:
 1 ripe pineapple
 1 eggplant
 1 white onion
 10 ripe cherry tomatoes
For the Marinade:
 1 tbsp roasted chili-sesame oil
 1 balsamic vinegar
 1 tbsp brown sugar
 1 tsp minced ginger
 1 tsp salt
 ½ tsp pepper

Wash all the veggies thoroughly.

Cut pineapples and veggies into 1” chunks. Put in a large container or bowl.

In a separate bowl, combine all ingredients for marinade. Once done, pour on fruit and veggies then marinate for about 1 hour.

Once done, take out fruit and veggies from the marinade and reserve it for basting.

Thread fruit and veggies alternately into 5” bamboo skewers.

Preheat Breville Smart Oven™ Pro under Grill Function (High Setting) for 175°C.

Line up kebabs and grill for 6 minutes.

Brush leftover marinade on top of the veggie skewers off the grill.

Serve with roasted chili-sesame oil and chopped parsley.
