Char Siu
 1 kg Pork Loin
  cup Hoisin sauce
 ½ cup oyster sauce
 1 cup Chinese cooking wine
 2 tbsp Light soy sauce
 ½ cup Red fermented bean curd
 ½ cup Honey
 3 cloves garlic (minced and turn into a paste)
 1 tbsp minced ginger
 ½ tbsp Chinese 5 spice powder
 ½ tbsp Aro-en smoked Salt (if you don't have smoked salt you can use kosher salt)
 ¼ tsp Cayenne Pepper
 ¼ cup water
Grilled Pork Belly drizzled with Chimichurri Sauce
 1 kg ork Belly sliced 1/2 inch thickness
For the marinade
 1 head Garlic
 ½ inch pc Ginger root
 1 cup white vinegar
  cup Fish Sauce
 1 tbsp salt
 1 tsp Fresh cracked black pepper
 3 Siling Labuyo 
Chimichurri
 1 bunch curly parsley
 2 cups Olive oil
 3 pcs of mint leaves
 3 cloves garlic
 1 tsp grated ginger
 ½ tbsp Fish sauce
 ½ tsp Salt
 1 lemon

To make the Char Siu
1

Combine all dry and wet ingredients into a saucepan, whisk in until well combined.

Simmer for 5 mins and let it rest to a room temperature.

In a huge food container place the pork loin and pour out the marinade. massage marinade into the pork.

Chill for 5 hours or overnight.

Using the Breville Smart Oven Pro, Pre-heat the oven under Roast function.

Roast pork loin under 185 Deg C for 1 hour.

While Roasting, put the leftover marinade in a saucepan simmer for 10 mins on a low heat until it thickens. (use this a glaze)

When pork is done, glaze it with the char Siu sauce and rest for 10 mins before slicing.

To make the Chimichurri

Using the Breville Kinetix Pro blender, process all of the ingredients until well incorporated.

Squeeze lemon juice and zest the mixture with lemon skin.

Mix and chill until ready to use. 

Procedure marinade and grilling

Using the Breville Kinetix Pro Blender pour wet and dry ingredients. Blend for 2 mins.

Pour out the mixture and marinate the meat for 5 hours or overnight.

When meat is ready, grill it for 3mins each side using the Breville Power Griller.

Drizzle with chimichurri sauce and serve with hot rice.

Garnish with Lolo rosa and arugula lettuce, cherry tomatoes and baby corn.
