 30 g Flechard Unsalted Butter, Cubed
 120 g Onion, white
 10 g garlic, minced
 500 g broccoli florets
 2 cups chicken broth
 240 ml heavy cream, chilled
 60 g Cheese, Cheddar, grated
 1 g Sea Salt
 0.5 g Black Pepper Crushed
 1 g Black Pepper Crushed
 Garnish:
 10 g broccoli florets
 15 g croutons
 3 g microgreens
 10 g Pili Nuts, salted and skinless
 3 ml heavy cream, chilled
 Serve with: (optional)
 120 g Sourdough Bread, sliced, buttered and toasted

1. In a large pot over medium heat, melt 30 g butter. Add 120 g chopped onion and 9 g minced garlic. Sauté for 5–6 minutes, until fragrant and translucent.

2. Place the blanched broccoli and sauteed aromatics into the Breville Q blender jug. Carefully ladle the the chicken broth into the jug. Add cream, butter, salt and pepper.

3. Secure the lid. Press "Soup" function, using the tamper if needed, until the soup is velvety smooth.

4. Transfer into a soup vessel and serve hot, garnished with boiled broccoli florets, chopped pili nuts, heavy cream, croutons and microgreens.

Serve with buttered, toasted slice of bread. Enjoy!
