For the Filet Mignon:
 ½ kg beef tenderloin
 1 tsp salt
 ½ tsp pepper
 ½ tsp brown sugar
 1 tsp cayenne
 1 tsp Spanish paprika
 1 tsp espresso powder Olive oil, for searing Butter, for searing
For the Mashed Potato:
 1 large potato
 3 tbsp unsalted butter
 1 full cream milk
 ½ tsp salt
 ½ tsp pepper
For the Homemade Gravy:
 1 tbsp butter
 ½ tbsp all purpose flour
 3 full cream milk
 3 tbsp Worcestershire sauce
To cook Fillet Mignon:

Using the Breville Smart Grinder™ Pro at its espresso setting, grind whole espresso beans.

In a small bowl, combine salt, pepper, brown sugar, cayenne, spanish paprika and espresso powder.

Rub combined spices generously on the tenderloin.

By using the Breville Multi Chef™, add olive oil and butter. Sear the tenderloin once ready, for 3 mins on each side. By doing this, you lock in juices of the meat.

Preheat the Breville Smart Oven™ Pro under Roast Function for 210°C.

Pop the tenderloin inside the oven and roast for 5 minutes.

Once done, set aside steak.

Wash and peel potatoes then submerge into cold water. Set aside.

Using the Breville Multi Chef™, boil 3 cups of water.

Cut potatoes into chunks for faster cooking.

Cook in the boiling water for 15-20 minutes or until tender.

Once cooked, drain potatoes using a colander.

To make Mashed Potato:

While hot, transfer in a large bowl. Add butter, milk, salt & pepper.

Mix until all ingredients are well-combined. End product should be smooth and silky.

Melt butter in the same pot of the Multi Chef. Add flour, milk and worcestershire sauce.

Whisk thoroughly until it thickens.

Set aside for plating.

Put mashed potato as the base then top with filet mignon.

To plate:

Drizzle with homemade gravy.
