Using the Breville Kinetix® Control, pulverize the graham crackers.
In a medium-sized bowl, combine graham powder, butter and sugar. Texture should be similar to wet sand.
Divide crust evenly into the bottom of lined cupcake pan or ramekins and bake using the Breville Smart Oven™ Pro under 160C for 5 minutes. Set aside to cool.
Using the Breville Multi Chef™, combine 1 bottle of strawberry jam and water. Stir until consistency is thin. Let cool.
Using the Breville Scraper Mixer Pro™, cream the cream cheese and sugar until fluffy.
Add egg yolks, one at a time, just until combined. Add vanilla.
Pour cheesecake mixture into cupcake pans or ramekins with graham base.
Bake at 160 C using the Smart Oven™ Pro for 20 minutes or until set.
Allow to cool completely or place in the refrigerator to chill.
Before serving, top with strawberry coulis and fresh strawberries.
