
In a pot place the pork belly (slab without bones) and boil 1 liter water togther with minced onions, garlic, lemongrass bulbs, bay leaf, sea salt and peppercorns. (Medium high heat 25 mins).
Poke the pork belly and check if it's already tender and cooked through.
When the pork is already cooked, place it in a colander and pat dry with kitchen towel. (make sure the excess liquids are absorbed by the kitchen towel) Chill in the fridge for 15 mins.
Pre-heat Breville Smart Oven Air Fryer to 180 Deg C.
Take out the pork bell in the fridge. Score the skin and rub salt all over the pork belly.
Brush the pork belly and Breville Air Fry basket with oil. Place the Air fry basket into the middle rack portion of the oven.
Turn the dial of the oven to "Air Fry" function and set the temperature to 180 Deg C and the time to 30 mins.
Once the pork is done in the oven. Let it rest for 5 mins before chopping. (This will retain the natural juices and moisture of the pork)
Serve it with any dipping sauce you like. Enjoy.
