Puff pastry is wrapped around nicely seasoned ground beef and then cooked in the Smart Oven Air Fryer, creating the crispiest empanadas you'll ever have.

For the filling
 250 g ground beef, lean
 1 piece Potato
 1 piece Carrots (local)
 1 piece Bell pepper, green
 1 piece red onions, minced
 3 piece garlic clove, minced
 0.25 cup grated cheese, quickmelt
 1 tbsp Soy sauce
 1 tbsp Rock Salt
 1 tsp Black Pepper Crushed
 1 tsp Paprika, ground
 1 tsp Cumin powder
 0.25 cup Olive oil
For the dough
 2 cup All Purpose Flour
 0.5 tsp Salt, Iodized
 1 tsp Baking Powder
 2 tbsp Sugar, refined
 2 piece Egg yolk
 3 tbsp unsalted butter, melted
 4 tbsp Water

In a preheated oiled pan, saute onions, garlic, carrots, and potatoes for 6 mins. Then add the ground beef, salt, pepper, cumin, paprika and saute for another 5 mins or until brown.

Once the beef is cooked, mix the cheese and set it aside.

Preheat the Breville Smart Oven Air Fryer to 180 Deg C for 5 mins.

Once mixed, change the attachment of the stand mixer to a dough hook.

Gradually add egg yolks and melted butter. Mix until it forms into a dough.

Once the dough is formed, knead it into a dough ball and place it in a covered bowl. Chill for 15 mins to rest.

Divide dough into round balls, and cover with some plastic wrap to avoid them drying out while assembling.

On a floured bench, roll out a dough ball with a rolling pin, until around ½ centimeter thick.

Place 2 tablespoons of empanada filling in the center of the rolled-out dough.

Fold the dough in half over the filling, then seal the empanada but pleating* the edges and crimping as you go.

Continue with the remainder of the dough and filling. Keeping the empanadas covered as you go so they don’t dry out.

Place the empanadas into the Breville fry basket (don’t overcrowd the basket), brush some olive oil and cook for 15 mins under 180 Deg C (“Air-fry Function).

Once cooked, serve with any sauce you prefer. Enjoy.
