Who would’ve thought that carrots and pineapples in cheesecake will taste so heavenly? We’re quite surprised, too!

For the cheesecake batter:
 500 g Swiss Valley cream cheese
 250 g Master Martini heavy cream
 230 g sugar
 130 g eggs
 14 g flour
 1 carrot
 1 pineapple
 2 tsp cinamon
 ¼ tsp nutmeg
 1 walnut (chopped)
For the crust:
 1 Flechard unsalted butter
 1 flour
 2 tbsp sugar

To make the crust:

Mix flour, butter and sugar until dough is formed.

Spread the dough into an 8-inch baking pan. Bake for 10 minutes.

To make the cheesecake batter:

Preheat the Breville Smart Oven™ Pro at 150°C under Bake Function.

Using the Breville Bakery Boss™ with the double scraper attached, mix the cream cheese until smooth without the lumps. Add heavy cream then mix well.

Add in eggs and sugar, grated carrot, pineapple, cinnamon, nutmeg, and walnut and mix for 40 seconds. Add flour then mix for another 40 seconds.

Pour to the mixture to an 8-inch baking pan then bake for 1 hour and 30 minutes using bain-marie method or until the color of the top is light brown.

Rest for 2 hours and pipe the top edge of the cheesecake then add desired toppings.
