Crinkles are classic for a reason. This fudgy-chocolate sugar coated cookie will take you to the next level. What's the secret? Espresso powder.

 1 unsweetened cocoa powder
 1 ½ granulated sugar
 1 vegetable Oil
 2 eggs
 2 tbsp vanilla extract
 2 cups all-purpose flour
 2 tbsp baking powder
 1 tbsp espresso powder
 1 tbsp salt
 1 confectioner's sugar

Using the Breville Scraper Mixer Pro™, attach the scraper beater to beat cocoa powder, granulated sugar and vegetable oil. Texture should be shiny, gritty, black dough of sorts.

Add eggs, one a time, mixing for 30 seconds each.

Add vanilla extract and beat thoroughly.

Whisk in flour, baking powder, salt, freshly-ground espresso powder from the Breville Smart Grinder™ Pro.

Combine dry ingredients into cocoa-oil mixture. Mix on a low a speed until well incorporated.

Cover the dough with cling wrap and chill for at least 1 hour or overnight before baking.

Roll dough into balls. Roll each into powdered sugar.

Place into baking pan lined with parchment or wax paper.

Preheat Breville Smart Oven™ Pro for 175°C under Cookie Function. Bake for 10-12 mins.

Chef's Note: Adding freshly-ground espresso powder to chocolate/cocoa based pastry will enhance the flavor.
