 2 piece Sweet potato
 2 piece Eggs, raw
 60 ml Vegetable Oil
 50 g Dairy, Unsalted Butter
 0.25 cup UHT full cream milk
 250 g Flour, All Purpose
 250 g Brown Sugar
 4.2 g Spice, Cinnamon Powder
 5 ml Vanilla extract
 10 g Allspice, ground
 10 g Nutmeg
 8 g Groceries, Baking soda

Peel sweet potatoes and boil them until cooked. Once cooked mash it until smooth.

Pre heat breville Smart Oven Pro to 175 Deg C. Combine all purpose flour, baking soda, cinnamon powder, nutmeg powder, all spice powder and brown sugar. Mix until well incorporated.

In the bowl of Breville Bakery Boss stand mixer, combine eggs, melted butter, vanilla extract and vegetable oil. Add the mixed dried ingredients and lightly mix for 2 mins. Slide in the mashed sweet potato and mix for another 1 minute.

In an oiled 9 by 5 inch loaf pan, transfer the batter and bake for 1 hour under 175 Deg C.

Allow bread to cool in pan for 10 minutes before turning out onto a wire rack to cool completely.
