 1 kg chicken thigh fillet, cut into large chunks
 2 pcs. of red bell pepper, largely diced
 2 pcs. of green bell pepper, largely diced
 10 pcs. of cherry tomatoes
For the marinade:
 1 tbsp lemon, juiced
 2 tbsp salt
 2 tsp cracked pepper
 1 tsp paprika
 1 tsp cumin
 ½ cup vegetable oil

In a bowl, combine the lemon juice, salt, pepper, paprika, oil and cumin. 


Chef's Note: You may adjust the heat level of your meat higher by adding a hint of chili powder into the marinade or simply add more paprika.

Add the chicken and mix - making sure that the marinade is well distributed.

Cover and place it inside the chiller. Marinate for 2 hours or overnight.

With the soaked bamboo sticks, skewer the kebabs- alternating the chicken and vegetables. 


Chef’s Note: Soaking the bamboo sticks will prevent it from splintering or becoming brittle during cooking.

Set the  Breville BBQ Grill™  on its sear function and preheat the grill.

Open the grill to 180 degrees and start placing the kebabs.

Grill the kebabs for 7 mins. or until the chicken is cooked through.

Serve the kebabs with pita bread or saffron rice. Enjoy!

TIP: You could try the same recipe using different meat like pork, beef or even lamb. For a healthier version of the kebabs, you could use chicken breast, tofu or fish. A different set of vegetable would equally be enjoyable for this dish- just like corn and carrots.
