 1 slab of pork loin, boneless, butterflied
 Salt and pepper to taste
 2 tsp paprika
 Pinch of lemon zest Oil, as needed
For the filing:
 4 slices of bacon
 250 g shitake mushroom, thinly sliced
 200 g goat cheese
 100 g blanched spinach
 6 cloves garlic
 1 pc onion, minced.
 Salt and pepper to taste.
 1 tbsp bread crumbs

Drizzle the pork loin with oil and season it heavily with salt, pepper, paprika and lemon zest. Set aside.

Set the Breville Smart Oven Pro™ in its roasting function, and use convection. Preheat it at 175 Deg C.

Lightly sauté the onions, garlic, mushrooms, and bacon.

In a bowl, combine the mushroom mixture, cheese, spinach, and breadcrumbs. Season with salt and pepper as needed.

Spread the mixture over the tenderloin and roll it up.

Using a butcher’s twine, thrust the pork loin firmly but not too tight.

Place it in a deep baking tray and cover it with aluminum foil.

Using the Breville Smart Oven Pro, Roast the pork loin for 50 mins under 170 Deg C.

Take off the foil, then turn up the heat to 200 deg C and roast it for another 15 minutes.

TIP: You can use different types of cheese that suits your palette.
