 2 Serving Espresso Shot
 4 tbsp Sugar, brown
 4 tbsp sago, cooked
 2 tbsp Prepared Gulaman, small cubes

In a pot, cook sago according to package instructions and add 2 tbsp of brown sugar. Cook until the sago pearls are soft and brown sugar is melted and incorporated to the sago.

Cook the gulaman according to package instructions, slice into small cubes and chill until ready to use.

Extract 2 shots of Espresso using the Breville Barista Express. Pour into 2 cups, add remaining brown sugar then add iced water. stir in sago and gulaman into the coffee. Serve!
