 2 pieces Potato
 100 g Shitake Mushrooms
 1 piece Avocado
 2 pieces Ripe Tomato
 2 tbsp nutritional yeast
 1 tbsp taco seasoning
 1 tbsp garlic powder
 40 ml Vegetable Oil

Slice potatoes into sticks and soak the potatoes for ~15-30 minutes in cold water, and rinse to remove the starch.

Dry the potatoes with kitchen towel.

Set the Breville Smart Oven Air Fryer oven to 425 F at 20 mins.
Lay the potatoes in a single layer on the fryer basket.

Spray them evenly with Oil and airfry for 20-30 minutes. Set Aside.

Toss the rough chopped mushrooms with taco seasoning, and arrange on half of the oven tray.

On the other half of the oven tray, arrange the sliced bell peppers in a single layer. Drizzle with olive oil.

Airfry for 15 minutes at 425 Fahrenheit or until well-roasted and lightly charred.

To assemble:
On a plate, arrange the fries in a heaping layer, season with garlic powder and nutritional yeast for a plant-based cheesy flavor.

Top with mashed Avocados, Tomatoes, roasted bell peppers, and mushrooms. Add a final sprinkling of nutritional yeast.

Optionally, you can also add your choice of toppings including scallions, beans, refried beans, or your choice of plant-based cheese.
Serve!
