
Set a pan over medium low heat. Drizzle olive oil then saute onions for two (2) minutes. Add garlic and cook for another minute.
Pour in a can of peeled tomatoes then add 1/4 cup of water or chicken stock. Season with ground cumin, salt and pepper then simmer for 10 minutes. In the last five minutes, stir in sliced okras and spinach.
Once cooked, transfer the Shakshuka into an oven-safe dish. Make a hole and add an egg.
Using the Breville Smart Oven, put the dish into the middle rack then activate Grill Function "High" setting and cook for 5 mins.
Serve with toasted baguette and enjoy!
