
Using the Breville Bakery Boss stand mixer, whipp the cream cheese unil light and fluffy. Transfer into a bowl and set aside.
Pre-heat Breville Oven to 175 Deg C.
Using the Breville Bkaery Boss stand mixer, mix the crushed grahams, melted butter and salt until well combined.
Brush with oil the base of the cake round pan and transfer the crushed grahams. Press evenly to keep the crust the same thickness.
Mix the creamcheese, grated queso de bola, eggs and lemon zest until well incorporated.
Transfer the cheesecake mixture into the baking pan and bake using the Breville oven to 175 Deg C for 40 mins.
Once done, let the cheesecake rest for 15 mins before slicing. Serve and enjoy.
