
Wash the asparagus thoroughly. Snap off the woody ends wherever they naturally break.
Dredge the asparagus spears into the flour. Then dip it in beaten egg then coat with grated parmesan cheese.
Line up the coated asparagus spears in baking pan. Spray some olive oil and bake in pre-heated breville Smart Oven Pro for 15 mins under 210 Deg C.
While baking, in oiled pan sauté onions,garlic, chilli flakes, cumin, salt, pepper and paprika until aromatic 2-3 mins. Add the canned tomato sauce and simmer for another 5 mins. once cooked place it in a dipping bowl.
When the asparagus is finished baking, place it into a dish plate together with the spicy tomato sauce. Add soft boiled eggs (optional) and enjoy!
