Papaya Juice Marinated Grilled Pork Belly

 1 kg Pork Belly (cut into 1 inch thckness)
 2 cups Freshly extracted green papaya juice
 2 tbsp Fish Sauce
 1 cup Calamansi Juice
  cup Garlic, minced
 1 tbsp Ginger, minced
 1 tbsp Rock salt
 ½ tbsp Black Pepper, freshly cracked
 Microgreens for granish (optional)

1. Using the Breville Juice Fountain Max Juicer (BJE410) process green papaya. Set aside the juice.
(You can use green papaya juice pulp in making atchara, pls check atchara recipe)

2. Wash the pork belly thoroughly, in a flat pan massage the papaya juice to the belly and cover it with cling wrap. Chill for 30 mins. (Papaya juice is natural meat tenderizer)

3. After 30 mins, drain the juice from the meat. Rub the meat with calamansi, fish sauce, minced garlic, ginger, salt and pepper and let it marinade for another 30 mins.

4. While marinating, pre heat the Breville Smart Oven Pro, set to Roast function.
Oil the baking pan then place the belly into roasting pan. Roast for 175 deg C for 30 mins or until cook through.

5. Slice into bite size, serve with asian slaw (shredded chinese cabbage, red cabbage) and garnish with micro greens. Best enjoyed with hot rice and spiced vinegar.
