Oven Baked Tuna Samosas

 184 g Canned, Tuna
 100 g Potatoes (with skin)
 50 g Vegetable, Carrots
 30 g Vegetables, Frozen Green Peas
 150 g Spring roll wrappers
 10 g Curry powder
 5 g Cumin powder
 5 g Sea Salt
 5 g Pepper, Cayenne
 1 piece Eggs, raw

For the tuna filling: Peel potatoes slice into cubes. then boil for 5 mins.

In heated pan with oil, sauté onions, curry powder, cumin and cayenne for 2 mins (low fire). Add minced garlic, minced carrots,boiled cubed poatatoes and frozen peas sauté for another 3 mins. Add the tuna, salt and pepper. (make sure excess liquid are drianed) Sauté again for another 3 mins. Place it in a bowl and set aside.

To fold a Samosa into a triangle shape using spring roll wrappers, you want to start by scooping a teaspoon of the filling and place it at the top center part of a piece of wrapper

Brush the outer edges of the wrapper with egg white, fold and form the shape into a triangle. Pinch the edges and all corners to make sure it’s sealed tight and there is no leakage

Brush the folded samosas with egg wash (use remaining egg). Then pop it into a preheated Breville Smart oven Pro (185 Deg C) for 20 mins. Optional: Garnish with chopped parsley and ketchup on the side. Serve hot.
