Oven Baked Crispy Pork Belly with Garlic Annato Rice

 500 g Pork, Belly
 6 piece Garlic clove
 2 tbsp Vinegar, white
 5 g Spice, Black Pepper Crushed
For annato garlic rice
 30 ml Vegetable Oil
 4 piece Garlic clove
 3 cup White Rice, cooked
 3 tbsp Sea Salt
 1 tbsp Annato Seeds

Prepare the pork belly bu cutting it into strips (1/2 inch thickeness). Mince the garlic, mix it into salt, pepper and vinegar.

Rub the garlic salt vinegar mixture into the pork belly and let it sit for 30 mins.

Pre heat Breville Smart Oven Pro to 180 Deg C. Brush baking pan with vegetable oil ad line up the marinated pork belly strips. Brush the pork belly with the remaining oil. Then Roast for 180 Deg C for 20 mins.

After roasting for 20 mins, brush the pork belly with water and put it back to the Breville Smart Oven and roast it under 200 Deg C for another 10 mins.

While waiting for the belly to crisp up, in an preheated oiled pan fry the annato seeds for 5 mins in a low fire. Once the oil turn into yellow to red in color , drain the oil and disregard the seeds.

In the same pan, put back the annato oil and sauté minced garlic cloves once the garlic are aromatic add the rice and pan fry it for 3 mins. Season with salt.

Serve the Crispy pork belly together with annato garlic fried rice and garnish it with atchara and sliced fresh tomatoes (optional).
