Miso Glazed Baked Salmon

 4 piece 170 g salmon fillet
Miso Marinade / Glaze
 1 tbsp miso paste
 0.25 cup Honey
 1.5 tbsp Soy sauce
 0.25 cup Water, warm
 1 tsp mirin
Side Dish
 200 g Mashed potatoes, prepared (with cream and butter)
 120 g french beans
 120 g Cherry tomato
 1 tbsp Butter
 0 n/a Sea Salt
 0 n/a Black Pepper Crushed
 4 piece lemon wedge

Mix the miso, mirin, soy sauce, and honey in a small bowl.

Marinate the salmon:

Pour half of the mixture into a container large enough to fit the salmon fillets, then pour the rest over the top of the fish. Make sure the fish is coated with the miso sauce. Cover the container and marinate for at least 30 minutes, and up to overnight.

Line the Breville baking pan with aluminum foil. Brush a little vegetable oil over the foil and lay the salmon fillets on top. Make sure there is an even, thin coating of marinade on top of the fish. Place the fillets no closer than about 6 inches from the broiler element in your oven. Broil for 6-10 minutes, depending on how thick the fillets are and how hot your broiler is.

Place the baking pan at the middle part of the oven rack. Using the Breville oven set the function to "Grill" for 10 minutes.

While grilling, prepare the french beans by stir-frying it in oil or butter then season with salt and pepper.

Once the salmon is done in the oven, serve it with stir-fried beans, mashed potatoes, fresh cherry tomatoes and lemon wedge on the side. Enjoy.
