Lime Spring Chicken with Camote Fries

 1 piece whole chicken, dressed
 1 piece red onions, minced
 3 piece garlic clove, minced
 1 piece Lemongrass
 3 tbsp Sea Salt
 1 tbsp Black Pepper Crushed
 5 cup Water
For the wet rub
 0.25 cup lime juice
 2 tbsp Fish sauce
 2 tbsp Vegetable Oil
For the camote fries
 2 piece Sweet potato
 3 tbsp Banana Ketchup

In a large pot, combine water, minced onion, garlic, lemongrass, sea salt, black pepper and bring to a boil.

When the water is boiling, submerge the whole chicken and adjust the heat to low. Boil for 10 mins.

Once boiled, drain excess water. Preheat the Breville Smart Oven Air Fryer to 190 deg C.

In a bowl combine, lime juice, fish sauce, and vegetable oil. Rub it into the chicken.

Peel sweet potatoes and cut them into sticks (fries).

Put the chicken into the fry basket. Air-fry the chicken for 40 mins.

In the last 20 mins, slide in cut sweet potatoes into the fry basket.

Once cooked serve with banana ketchup. Enjoy.
