Grilled Chicken in Wheat Bread Panini

GRILLED CHICKEN FILLING:
 ½ kg chicken fillet
 1 tbsp oil
 1 tsp cayenne
 ½ tsp cinnamon
 ½ tsp nutmeg
 1 tbsp salt
 ½ tbsp pepper
 ½ cup butter
 ½ cup roasted almonds
 3 pcs. celery stalks
 ½ cup raisins
WHEAT BREAD:
 3 cups water, warm
 2 tbsp olive oil
 ½ cup sugar
 2 ¼ tsp yeast
 1 tbsp salt
 ¼ cup milk powder
 3 ½ cups whole wheat flour
 3 tbsp Butter, melted

Pour in the wet ingredients first.

Followed by the dry ingredients.

Using the Breville bread maker (BBM600), activate the program to "whole wheat" and wait until it's done.

Let your bread sit for a while, then slice.

Marinate the chicken with the herbs and spices.

Using the Breville BBQ grill, grill the marinated chicken until done.

Slice the chicken into small chunks.

Place the grilled chicken chunks in a bowl and mix with raisins, roasted almonds, celery and mayo.

Add salt and pepper to taste. Mix well.

Coat the sliced wheat bread with butter then put the chicken filling topped with a cheese sheet. Cover with another wheat bread slice to sandwich.

Grill the sandwich in the 800GR. Press with the griddle side to produce the grilled marks.

After 2 minutes or less, your Grilled Chicken in Wheat Bread Panini is ready to serve!

Tip in Cleaning the Power Grill: while the surface is still hot, you can wipe it clean using a damp cloth.
