Fussili in Hummus Aglio Olio with Mushroom & Roasted Peppers

 350 g Fusilli pasta, cooked to al dente
 ½ cup Hummus
 ½ cup Olive oil
 5 pcs. garlic cloves, minced
 1 cup shitake mushrooms, sliced
 1 pc. green bell peppers, grilled
 1 pc. red bell peppers, grilled
 3 pcs. sundried tomatoes
 10 pcs. black olives, pitted
For the hummus:
 2 cups chickpeas, canned, drained, liquid reserved
 ¼ cup extra virgin olive oil
 2 cloves of garlic
For the seasoning:
 1 tsp salt & pepper to taste
 1 tbsp lemon juice
 1 tsp paprika
To make the hummus:

Using the  Breville Kinetix Pro Blender™ , process the mixture until smooth.  Note: If the mixture is too dry, you can add a bit more of olive oil.

Season to taste.

Add some lemon juice and paprika.

Mix and serve as desired.

Using the Breville Multichef™, sauté the garlic in 2-3 tbsp of olive oil.

Add the Shitake mushrooms. Sauté until cooked.

Add the hummus and thin it out with a bit more of olive oil.

Add the pasta. Season with salt & pepper.

Plate the pasta and top with vegetables.
