Double Cheese Breakfast Swirl

For the Dough:
 300 g all purpose flour
 1 pc egg
 100 g butter, melted
 1 cup water
 2 tbsp yeast
 ½ tsp pepper
 2 tbsp sugar
 pinch of salt
For Filling:
 500 g Bacon, cooked
 46 pcs eggs, scrambled, cooked
 1 cup cheddar cheese, small cubes
 1 cup mozzarella cheese, small cubes

Make the dough: combine all the ingredients in using the dough hook of the Breville Scraper Beater Pro and set the machine to kneading.

Continue kneading for about 5 – 10 mins until the dough is smooth, elastic and turns into a ball.

Set aside in a warm area and let it rise for 30-45 mins. Preheat the Breville Smart Oven to 350F.

Roll dough to ¼ - ?” thick in a floured surface. Keep the dough rectangular as much as possible.

Evenly spread the filling into the dough leaving 2-3 inches on the upper side empty.

Gently roll the dough keeping the entire filling intact - into a large log.

Cut the log into 1 – 2 “ thick and place it in a greased pan.

Place it in the oven bake for 30 mins or until the cheese is totally melted.

Chef's Tip:
 Try crisping the bacon to give your swirls a bit more character.
