CRUMPET W/ BLUEBERRIES & CARAMEL SAUCE

Crumpets are popularly known as griddle cakes. Instead of serving and eating with butter, we decided to add fruity and sweet flavors to elevate this traditional British treats.

 1 milk
 1 ½ water
 2 tbsp melted butter
 3 ½ all-purpose flour
 1 tbsp baking powder
 1 ¼ tbsp salt
 1 tbsp honey
For the caramel sauce:
 1 brown sugar
 4 tbsp butter
 1 heavy cream
 ½ tbsp vanilla extract
To make the crumpet:

Using the Breville Scraper Mixer Pro™, attach whisk attachment and operate combine all dry ingredients.

Once the dry ingredients are well combined, add the wet ingredients then whisk for 2 minutes.

Cover the bowl, and let the batter rest at room temperature for 20 mins. It will expand and become bubbly.

Preheat the Breville Smart Oven™ Pro to 175°C.

Lightly grease the baking pan and place well-greased 3/4" English muffin rings. 4 rings should fit

Pour sticky batter by the scant 1/4 cup into each ring; a muffin scoop works well here.

Cook under Crumpet Function for 5 mins. Top with blueberries and drizzled with caramel sauce.

To make the caramel sauce:

Using the Breville Multi Chef™, mix the brown sugar, heavy cream, butter and salt over medium-low heat.

Cook while whisking gently for 5-7 minutes until it gets thicker and shiny.

Add the vanilla and cook another minute to further thicken the sauce.
