Coffee Rubbed Roasted Chicken

For the Coffee Rub
 1 ½ tbsp Freshly ground coffee
 1 tbsp Spanish Paprika
 1 tbsp Salt
 1 tbsp Garlic powder
 1 tbsp Onion powder
 1 tbsp Brown Sugar
 1 tsp Cayene pepper
 1 tsp Black Pepper
 1 tsp Cumin powder
 1 tsp Dried Rosemary
For the chicken
 1 kg Chicken Thighs and Drums
 1 Lemon
 1 cup Full Cream Milk

1. Wash the chicken thoroughly and pat dry the chicken.

2. In a bowl, marinate chicken with milk and lemon juice for about 30 minutes. Massage the acidified milk to poultry and chill. (This will make the chicken tender and flavorful without toughening up the meat)

3. In a separate bowl, combine dried herbs and spices including the ground coffee.

4. After 30 mins of wet marinating the poultry, pat the dry the meat then rub the coffee and spices mix. Chill for another 30 mins (Best overnight)

5. Place the rubbed chicken into the baking pan. In a Preheated Breville Smart Oven Pro, roast the chicken for 175 Deg C for 45 mins

6. Best served with roasted marble potatoes or hot rice.
