Bruschetta with Hummus Spread

 1 pc French bread, sliced ½“
 3 pcs Tomatoes, small dice
 2 pcs White Onions, small dice
 bunch of Fresh parsley, chopped
 ¼ cup Olive oil
 ½ cup chickpeas, boiled and drained
For the Hummus:
 2 cups chickpeas, canned, drained, liquid reserved
 ¼ cup extra virgin olive oil
 2 cloves of garlic
For the seasoning:
 1 tsp salt & pepper to taste
 1 tbsp lemon juice
 1 tsp paprika
To make the hummus:

Using the  Breville Kinetix Pro Blender™ , process the boiled chickpeas until smooth.  Note: If the mixture is too dry, you can add a bit more of olive oil.

Season to taste.

Add some lemon juice and paprika.

Mix and serve as desired.

Combine the onions and tomatoes. Drizzle with olive oil.

Season with salt and pepper.

Toast the sliced French bread, spread a tablespoon of hummus and top with the salsa mixture.
