
Clean and pat dry the cod fillet with paper towel.
In a bowl, combine the salt, pepper, paprika, garlic powder, onion powder and calamansi juice.
Rub the mixture to into the cod fillet and set aside.
Using the Breville blender, place the cornflakes into the jug and press pulse to process (20 secs).
Dredge the the cod fillet into the flour, dip into the beaten eggs and coat with the crushed cornflakes.
Pre-heat the Breville Smart Oven Air-fryer to 200 Deg C.
Place the crusted cod fillets into an oiled air-fry basket and air-fry for 12-15 mins under 200 Deg C.
Once cooked, serve with lemon wedge and creamy peperonata pasta (separate recipe).
