Baked Tomatoes with Onion & Mushroom Stuffing

Whether you’re looking for a side dish or a main dish recipe, you can rely on this stuffed tomatoes recipe especially when you’re in a hurry.

 4 piece medium-sized tomatoes
 60 ml Olive oil
 150 g White Onions
 200 g Shitake Mushrooms
 20 g Butter, unsalted
 40 g Cheese, Feta
 50 g toasted wholemeal breadcrumbs
 30 g italian parsley, freshly chopped
 15 g basil leaves
 0 n/a Sea Salt
 0 n/a white pepper
 0 n/a Lemon, zest

Remove the core of the tomato with a sharp knife then blanch.

De-seed the tomatoes then remove the top of the tomato (small area only about the size of a coin) to allow filling to be placed in.

In a pan, heat the oil gently then add the roughly chopped onions.

Cook gently then after 2 mins add the roughly chopped mushrooms and cook until all the liquid disappears. Once done, add the butter.

Place the cooked onions and mushrooms into a bowl. Add the chopped basil, toasted breadcrumbs and seasoning.

Add chopped fresh parsley, basil & crumble in the feta cheese then grate the lemon zest into the mix.

Place filling inside the scooped out tomatoes and bake using the Breville Smart Oven Air Fryer for 12 mins at 160 deg C.
